One of his best (IMO), Black Star - here (http://video.google.com/videoplay?docid=-5383694820938685500) (WARNING: lots of smoke).

He did G3 with Satch a few years ago. Very tasty.

Another of my fav's is Eric Johnson he's way under rated if you ask me. Here is a long clip from G3 with Joe Satriani, Steve Vai, and Erirc Johnson. Its a long clip so if you don't like guitar you better just skip it.LINKY (http://video.google.com/videoplay?docid=6106074772632082583&q=Eric+Johnson)

Nice clip. I liked the blue lighting for 'Flying In A Blue Dream'.
Classy stuff.

I've got the original G3 vid. Eric is a bit too jazzy for me, although the version of Red House is good.

Also got one of his tutorial vids. Strangest thing is that he is trying to teach people a picking style that he is also just learning. Apparently he found a great guitarist using it and decided to change his own style. I'm guessing that's where the jazzy picking comes in.

Satch is much smoother with his legato style

Some funny fake vids or Petrucci on youtube aswell :D

He's got a good solo in the track "Play with me". Very neo-classical. It was in Bill and Ted's Excellent Adventure.
