So how does this work? Does it run smooth? Anybody mess with this? Does this only apply to certain Mac's?

Only the new Intel-based Macs will run Windows. You can run any version you want, XP, XP home, Vista, etc. It's really seamless and pretty much problem free.
You can use Apples Bootcamp application and have a dual boot system. Or you can run something like Parallels Desktop which lets you run both OSX and Win at the same time.

Before the Intel conversions, if you wanted to emulate a PC environment you could use Virtual PC from Microsoft. It worked but wasn't great. Still isn't. It was emulation though, not native. With the Intel-Macs the PC software runs natively, just like if it were installed on a PC. I use Parallels Desktop just about every day for web testing.

Instead of Intel's what processors did Apples use? What did they put in them?

Up until mid 2005 Apple used RISC processors from Motorola. They worked fabulously. It's my understanding that Apple wanted a more robust environment for it's operating system so the natural course of development lead them to Intel who only makes processors and therefore could build something specifically geared to support what Apple wanted to support. For the real story, you'd need to ask Steve Jobs.
