She could be using the BCC field when composing her emails. In some mail clients, and some internet mail servers, like Yahoo, they may require that the message have a TO field entry, in which case, either she or the server tags her email address in the TO field.
These servers/clients that require the TO are doing so in an effort to trim spam.
Also, for those that may not know, the BCC field of an email composition hides the email addresses inserted in it on the recipient's end. It comes in handy when sending a message to a bunch of folks and you don't want to pass on a whole list of email addresses to them.

twistedcranium, Ithink your right, I think she is sending it as a blind copy. Thanks to you both.

I'd also like to add that using the BCC field for an important message MAY NOT be the best way to send it. Some folks setup spam filters that look for the recipient's address in the TO field, and if there is nothing there, the spam filter will segregate the mail.
So I've taken to the habit of doing the following with my email when sending:
-to a large group of folks, I use the BCC field
-to one or two people maximum, I use the TO field
-for a message that I expect a reply from, I ALWAYS use the TO field
