Profile - Path - I do not know problem!

I have a domain with w2k & AD running it, no DHCP. I use "home folders" on the server and a path to same folder for roaming profiles. For some reason on my computer the same 3 users folders always show up in my Documents and Settings/myusername/My Documents(always the same 3). I have looked at their computers and I can not find any path putting them there - no sync or anything.
Also, I when I open my windows explorer, right under the desktop icon on the left pane is a shortcut folder to all the users folders on the server. I can delete the shortcut and it says it will not delete the folder but all the folders come back on the next log in. I have even deleted the Ntuser.dat on the server folder and then deleted the folders on my local box and logged off and everything comes back.It is driving me crazy. What's wrong?
