Does anyone know of a (cheaper) alternative to Acrobat 7 that can create and then organise pdf pages? Ideally, it should be compatible with Mac.

You could look at YakaPDF (http://downloads.vnunet.com/download/text+editors/yakapdf/_32815.html)
I can't vouch for it as I never tried it...also it may help if you can read a bit of Francais.
