Removing Roaming Profiles

I would like to remove our users Roaming Profiles. If I simply change the user in AD under the Profile tab, User Profile, Profile Path and delete the path the user will lose their desktop look and feel. What would I need to do on the workstation before I delete the roaming profile path? The desktop is Windows XP Pro and the server is Windows 2000.
