Alright, I realize possibly most of you aren't interested in cookie recipes, BUT!! These are good! Recipes of a friend, and she posted them publicly so I feel like I can give them out!
HAWAIIAN COOKIES
1 cup granulated sugar
1 cup brown sugar
1 cup shortening
2 eggs
1 cup drained, crushed pineapple
1 cup nuts
1 cup coconut
4 cups flour
2 teaspoons baking powder
1 teaspoon soda
1/4 teaspoon salt
1 teaspoon vanilla
1 teaspoon banana flavoring
Preheat oven to 350. Beat sugars and shortening until creamy. Add eggs and beat well. Add drained pineapple, nuts, and coconut.
In a separate bowl sift together all dry ingredients and fold into creamy mixture. Add flavorings and mix well.
Drop by teaspoon on ungreased cookie sheet. Bake 12 minutes at 350. Makes 6 dozen medium-sized cookies. While cookies are cooling, I make the frosting.
ICING
2/4 cup shortening
1 box powdered sugar
1 teaspoon cream of tartar
1/2 teaspoon salt
2 tablespoons milk (approx)
1 teaspoon vanilla
Sometimes I vary the liquid with juice from a jar of maraschino cherries. After the cookies are frosted, I decorate with chopped nuts, cherries, and coconut. These cookies are miniature works of art and look almost too good to eat, but you'll definitely want to because they are very moist, yummy, and different from your usual cookie fare.
For those allergic to coconut, you might want to try this next recipe which is a bar cookie.
CARMEL WALNUT BARS
1-1/2 cups unsifted flour
1 teaspoon baking powder
1/2 cup butter
1 cup granulated sugar
2 egg yolks
2 tablespoons milk
1 teaspoon vanilla
2 egg whites
1 cup brown sugar
1 cup walnuts
Preheat oven to 350. Grease 9 X 9 X 2 inch baking pan.
Sift flour with baking powder.
In medium bowl with mixer on medium speed, cream butter with *granulated* sugar and egg *yolks* until light and fluffy.
At low speed, beat in flour mixture along with milk and vanilla -- just until combined. Turn mixture into prepared pan, spreading evenly, and bake 20 minutes.
In a small bowl, beat egg *whites* until stiff. Gradually beat in *brown* sugar, then add nuts. Spread evenly over warmed cookie bars. Bake 20 minutes or until lightly brown. Yields 16 delicious bars.
TEXAS ORANGE SUNSHINE COOKIES
2-1/2 cups sifted flour
1-1/2 teaspoons baking powder
1 teaspoon salt
1/2 cup solid vegetable shortening
1 cup sugar
2 eggs
1 tablespoon grated orange rind
1/2 cup orange juice
1/2 cup chopped pecans
Preheat oven to 375. Coat cookie sheets with a nonstick cooking spray. Sift flour, baking powder, and salt onto waxed paper.
Cream shortening sugar, and eggs until fluffy. Mix in orange rind and juice. Stir in flour mixture until blended. Mix in pecans.
Drop dough in rounded teaspoonfuls onto cookie sheets, leaving about 3 inches between cookies. Bake at 375 for 12-15 minutes until brown. Remove to wire rack. Frost with orange icing (see below) while still warm. Makes 5-1/2 dozen cookies.
Orange Icing
Combine 2 tablespoons vegetable shortening, 2 cups sifted confectioner's (10X) sugar, 1 teaspoon grated orange rind in bowl. Gradually stir in 2-3 tablespoons orange juice until good consistency.
