Setting default programs Office XP

I have been using Office XP for years. I downloaded a trial version of 2007 office. I noticed some of my documents; excel documents converted to the new version. I would like Office XP to be my default program so that when I make a work doc or excel doc the old version is used. 2007 is used mainly for outlook. I know little about computers so please go slow. Thank you
