Bootable Knoppix 3.2 CD
I'm new to doing things with Linux. I have XP SP2 installed and NTFS format. How can I use the Knoppix bootable CD to find, access or copy files from the NTFS C: drive?

AFAIK Copying shouldn't be a problem.

I thought with a bootable / livecd that all changes made go away after rebooting? Was I wrong in that thinking or was something I read incorrectly read by me?

Yes. LiveCD's run in memory only and once a system is powered down all memory is wiped. But you can still gain access to an NTFS partition with a Linux LiveCD. I do it all the time here @ work with a Slackware CD (has good network support thus making a nice file recovery system.)

You can't write to NTFS file formatted drive, only read. There are some NTFS write projects for Linux but nothing 100% successful yet.
